There's a very interesting rom called MIUI I found browsing the web. It's originally developed in China, but there is a port of the rom out with translations! It's super cool! If you like iPhone or miss it, install this now!

This is one of the more popular roms, besides CyanogenMod. The install process is the same as any other custom rom on the Nexus 7. No Gapps are needed with this rom, come pre-installed.
