So, I don't think I want to use encryption anymore. I am not putting any sensitive personal data on my N7. It would also be nice to have some of that performance I remember before encrypting my tablet.
So, how do I turn it off?

Unfortunately, encryption is irreversible. At least for anyone who doesn't work for the FBI or NSA.
You will have to restore your N7 back to factory condition.
