I just turned on full disk encryption and spent a little over an hour waiting for the process to finish. My wonderful little tablet, which used to be fast, is now moving like a bloated pig. Is this the norm? Any workarounds?

Same problem. You would think that Google wants to be taken seriously in the enterprise space...you know, like Apple. Ironically, I kind of went with Android for the encryption capabilities.
I thought about just going with screen lock but don't feel comfortable with that being my "security."
Encryption will always slow down a device. Slowdowns for added security is a trade off you'll have to make if you want it on. Keeping your device unrooted with a passcode is usually good enough for the average user.
